Pairing non-alcoholic beverages with fine cuisine is still largely unexplored territory in gastronomy. The complex specialties of WiesenObst often contain 0% alcohol, yet always deliver 100% flavor.

An apéritif should be light, dry, and stimulating, awakening the appetite.

Our Blanc de Blanc with Chardonnay – the most refined pleasure from our house – is a perfect choice. Matured on the lees, then dealcoholized and refined with herbs, flowers, and spices, it develops a uniquely delicate aroma.

Our TeaSecco, with the tannins of green tea and delicate fruit notes, also makes a refreshing apéritif and pairs beautifully with the first bites.

Brand new to our range is the ViSecco Sauvignon Blanc. Made from dealcoholized grape wine, it offers a slender, dry apéritif that refreshes the palate.

Whether accompanying a fine salad with feta, fresh oysters, or even a delicate soup – these creations are perfectly suited to light starters.

On the palate, subtle fruity notes, fresh herbs, and citric components of Douglas fir play together beautifully, harmonizing with light cuisine.

The fine tannins of green tea, as found in our TeaSecco, reveal harmonious partners in poached white fish, shellfish, and fresh cheeses.

In spring, during asparagus and strawberry season, you will find our Cuvée No. 23 in our assortment. With its fresh acidity and delicate fruitiness, it is the ideal companion for light spring dishes, as well as sushi and sashimi.

Refined Dishes with Fresh Herbs

For these creations, we play with a potpourri of different herbs and other exciting components such as cucumber, bell pepper, pepper, and red mustard.

With white asparagus and poached white fish, we recommend our 35 Degrees Dry with Sauvignon Blanc | Mirabelle | Flowers.

For a beverage with noticeable acidity, we suggest pairing it with either salty or sweet dishes. Our Cuvée No. 11 harmonizes perfectly with dishes that combine both components – for example, onion tart, fried fish, or white meat.

Asian and Spicy Dishes

Asian cuisine can – and should – be accompanied by a certain sweetness to gently balance the spiciness of the dishes.

The petals of the Damask rose lend a fragrant note to our Rose Magic, which, complemented by various kinds of mint, pairs beautifully with tabbouleh.

The green tea notes in our TeaSecco highlight Asian spices to perfection.

Whether vegetarian, with meat, or with fish – our creations also make an excellent match for these dishes.

Our still variant, Inspiration 4.2, captivates with the fresh acidity of blackcurrant. This freshness is beautifully balanced when paired with rich dishes. The aromas of bell pepper pair wonderfully with ratatouille or chicken with peppers.

The forest also has much to offer: our Cuvées No. 25 and No. 20, with the fresh shoot tips of Douglas fir and the tart notes of sloe and juniper, are ideal companions for pan-seared game and game birds.

Tuna and salmon, whether raw or seared, can be paired with Cuvée No. 12 or No. 9. Here, you will find both fruitiness and spice, which harmonize beautifully with these types of fish.

Hearty Meats and Smoked Dishes

Hearty dishes call for an equally robust accompaniment.

A true challenge – but one we master well, as we work with tannins from fruits such as aronia, with smoked salt and smoked tea, as well as with dark vegetable juices.

Our 36 Degrees Grenache | Plum | Herbs, with its powerful tannins from Grenache, is an excellent match for seared meats, where it helps to release the protein and create the umami flavor on the palate.

Its Mediterranean herbal notes also pair wonderfully with vegetarian dishes, for example baked eggplant.

Our Organic Red also carries a good measure of tannins thanks to the use of aronia.

For smoked dishes, we created our Inspiration 4.5, which features an intriguing smoky aroma – partly from double-smoked black tea. With its earthy notes, it also pairs beautifully with mushroom dishes.

Whether your menu ends on a sweet or savory note – we have the perfect alcohol-free accompaniment.

For dessert, the beverage should not be overly sweet. That is why, in our Inspiration 4.4, we use the tannin-rich Green Hunting Pear juice, combined with barrique wood. Likewise, in Cuvée No. 10, the wild elderberry delivers an intense flavor which, together with the perry pear, brings a pleasant bitterness.

This ensures that even at the end of the menu, there remains a sense of tension and excitement – and the creations never feel heavy or saturating.
